Description
These 35-year-old vines extend over 1 hectare. The parcel is located on the right slope of Pommard (Beaune side) at 330 meters above sea level, with a south-facing orientation. It is a white marl soil. The yield is approximately 35-40hl/hectare. We harvest manually. The grapes are sorted, de-stemmed, not crushed, and placed in tanks by gravity. The fermentation is gentle and long in stainless steel tanks, using natural yeasts. We press the cap moderately and the maceration lasts from 18 to 25 days.
