Description
In this plot, measuring 0.42 hectares, the vines are between 15 and 50 years old. The soils are deep calcareous over gravel. The harvest is late and is done by hand, in small baskets. Once it arrives at the winery, a selection of bunches is carried out on a table. It is then destemmed and goes to the fermentation by gravity, where it undergoes fermentation with indigenous yeasts in 25-hectoliter wooden vats for a period of 18 to 20 days.
