Description
Planted sixty years ago in a particularly rocky clay-limestone terroir, today the vineyard remains solid on the mountain of Beaune. Special attention is given to the vines: soil life is preserved, yields are naturally low, and the entire estate is managed under organic farming practices, with certification since 2009.
The harvest is done manually and a meticulous selection process is followed both in the vineyard and in the winery. The grapes are placed in the tanks by gravity, without being pressed. Then, gentle fermentations begin in stainless steel tanks using indigenous yeasts. The wine is aged for twelve months before being bottled without clarification or prior filtration.
The Clos des Topes Bizot from Côtes de Beaune presents an intense color and a bouquet of great elegance. On the palate, its notes of violet and forest fruits stand out. It is recommended to enjoy this wine at least five years after its vintage.
