These are old vines planted on 1 hectare. They are located on the south side of Pommard (Volnay) at the foot of the hills. The young vines from this terroir are vinified separately and make up our "Pommard 1er Cru" cuvée. It is a soil of brown limestone over hard and stony limestone. The yield is approximately 35-40hl/hectare. We harvest by hand. The grapes are sorted, destemmed, and not crushed. We carry out a pre-fermentation maceration releasing natural yeasts. The fermentation is gentle and prolonged in stainless steel tanks. We press the cap moderately, and the maceration lasts from 18 to 25 days
