Description
The plot where the grapes for this French wine are grown is at an altitude of 320 meters and is located to the north of the appellation. It is oriented to the east, over a very hard slab of pink limestone. The yield is around 35-40 hl/ha. The harvest is always done by hand. The grapes are de-stemmed and not crushed but are gravity-fed into the tanks. Maceration lasts for 3 or 4 days. Fermentation is carried out with indigenous yeasts for 20 to 25 days. The wine ages in cold cellars, in barrels that are 30% to 50% new. It is bottled unfiltered after 16 to 18 months.
