Description
Pago de Otazu (D.O.P. Pago de Otazu) is a blend of Merlot and Cabernet Sauvignon, made from grapes from our D.O.P. Pago vineyards harvested by hand in October, in 12-kilogram boxes to keep the fruit in its optimal condition until pressing.
The elaboration begins with cryomaceration at 5ºC for seven days, after which alcoholic fermentation takes place in small concrete deposits of 40 hectoliters and malolactic fermentation in French oak barrels. The resulting wine is fine-tuned with 18 months of aging in wood.
