The vines are over 45 years old. They are located on the left slope of Pommard and are exposed to the North\/Northeast. The soil is brown limestone over white marl and hard limestone. The yield is approximately 35-40hl\/hectare. We harvest manually. The grapes are sorted, destemmed, and not crushed. We carry out a pre-fermentation maceration, releasing natural yeasts. The fermentation is gentle and prolonged in stainless steel tanks. We moderately press the cap and the maceration lasts from 18 to 25 days. We age our wines on lees in a cool cellar, in barrels (30% new 500-liter barrels). We transfer by gravity one month before bottling,<\/p>\n
